My Mom’s (the best) Plum Cake

This kind of cake is the most popular in my family home. Depending on season you can use apples, peaches or apricots instead of plums, but my favorite version is with them. I love their sweetness and sourness which combines together. That is definitely extremely comfort cake, which always is perfect, its impossible to ruin it unless you burn it ;). It goes perfectly with whipped cream or ice creams, hihihi or both !

Ingredients aka your shopping list

  • 4 eggs
  • 250g margarine
  • 3 cups flour
  • 1/2 cup sugar
  • 1 cup sliced plums
  • 1 tbsp cream
  • 1/2 cup powdered sugar
  • salt


Combine flour, sugar, margarine, 4 yolks, a bit of salt and cream in the bowl of food processor and pulse until combined. Then knead the dough to incorporate all ingredients and create 3 balls out of it (1 big, 2 small) and store them in fridge for 30 minutes. Butter a 28 cm springform pan and roll out chilled big ball of dough on it. Repair all the cracks with left over dough, pierce crust all over with fork and store in the fridge for 30 minutes. Arrange slices of plums as done in below pictures.Grate first small dough ball on top of plums. Combine egg withes with pinch of salt and powdered sugar, beat until white and fluffy foam-cream creates. Spread created foam-cream on top of the first layer of crumbles. In the end grate second small dough ball on foam-cream. Preheat oven to 180 ˚C and bake for 80 minutes until top of the cake is golden-brown.
